- 1 lb. large shrimp, peeled and deveined
- 2 tbsp. olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 tbsp. tomato paste
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup corn kernels
- 1 cup cooked white rice
- 1 lime, cut into wedges
- salt and pepper, to taste
- fresh cilantro, chopped, for garnish

Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the red bell pepper and cook for another 5 minutes.
- Add the tomato paste, cumin, chili powder, and oregano and cook for 1-2 minutes, stirring constantly.
- Add the chicken broth, diced tomatoes, corn kernels, and cooked white rice. Bring to a boil and then reduce heat to low.
- Add the shrimp to the pot and cook until they turn pink, about 5-7 minutes.
- Season with salt and pepper, to taste.
- Serve hot with fresh cilantro and lime wedges on top.
Notes
