Prep Time

Preparation time for this recipe is about 20 minutes.

Cook Time

Cooking time for this recipe is approximately 45 minutes.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 large onion, chopped
  • 5 cloves of garlic, minced
  • 2 bay leaves
  • 1 tablespoon of salt
  • 1/2 teaspoon of black pepper
  • 10 cups of water
  • 2 tablespoons of olive oil
  • 1 cup of chopped fresh parsley
  • 1 lemon, juiced

Equipment

  • Large soup pot
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Method

  1. Remove any giblets from the chicken and rinse it inside and out with cold water. Pat it dry with paper towels and set it aside.
  2. Heat the olive oil in a large soup pot over medium heat. Add the onions, carrots, and celery, and sauté until the vegetables are soft and the onions are translucent, about 5 minutes.
  3. Add the garlic and bay leaves and sauté for another 2 minutes.
  4. Add the chicken to the pot, breast side down. Pour in enough water to cover the chicken completely, about 10 cups. Add the salt and pepper and bring the soup to a boil.
  5. Once the soup is boiling, reduce the heat to low and let it simmer for about 30 minutes. Skim off any foam or fat that rises to the surface.
  6. After 30 minutes, remove the chicken from the pot and let it cool until you can handle it. Remove the meat from the bones and shred it into bite-sized pieces. Discard the bones and skin.
  7. Return the chicken meat to the pot and add the parsley and lemon juice. Let the soup simmer for another 10-15 minutes so the flavors can meld together.
  8. Taste the soup and adjust the seasoning as necessary. Remove the bay leaves before serving.
  9. Serve the soup hot with some crusty bread or crackers.

Notes

This recipe makes enough soup to feed a crowd, so feel free to freeze the leftovers for later. You can also adjust the amount of salt and pepper to suit your taste.
