- 1 pound of chicken breast
- 1 onion
- 3 garlic cloves
- 2 tablespoons of vegetable oil
- 1 can of diced tomatoes
- 2 cups of chicken broth
- 1 teaspoon of curry powder
- Salt and pepper to taste
- 1/4 cup of peanut butter
- 1/2 cup of heavy cream
- 1/4 cup of chopped peanuts
- 1/4 cup of chopped cilantro

Method
- Begin by seasoning the chicken breast with curry powder, salt, and pepper.
- Heat the vegetable oil in a large pot over medium heat.
- Add the chicken breast to the pot and cook for around 5 minutes until browned on both sides.
- Remove the chicken from the pot and set aside.
- In the same pot, add the onion and garlic and cook until the onion is translucent.
- Add the can of diced tomatoes and chicken broth to the pot and bring to a boil.
- Reduce the heat and let the soup simmer for around 1 hour.
- Remove the soup from the heat and let it cool slightly.
- Using a blender, puree the soup until smooth.
- Return the soup to the pot and add the peanut butter and heavy cream.
- Cook the soup for a further 10 minutes.
- Serve the soup in bowls and garnish with chopped peanuts and cilantro.
