Method
- Wash the beef bones and beef shanks with cold water and place them in a large pot.

- Season with salt and pepper to taste.
- Boil the rice noodles according to package instructions.
- Thinly slice the beef shanks and set aside.
- Serve the soup with the rice noodles, sliced beef shanks, bean sprouts, cilantro, Thai basil, mint leaves, lime, and fried shallots.
