- juice of 1 lemon
- salt and freshly ground black pepper

Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger, and cook until softened.
- Add the curry powder and flour, and stir to combine.
- Add the stock, carrots, potatoes, red pepper, chopped tomatoes, and red lentils. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the vegetables are soft and the lentils are cooked.
- If desired, use a blender to puree the soup until smooth.
- Stir in the mango chutney, fresh coriander, and lemon juice.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional fresh coriander if desired.
