- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and diced
- 4 celery stalks, diced
- 8 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup uncooked egg noodles
- 2 tablespoons chopped fresh parsley

Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes until softened.
- Add the carrots and celery and sauté for another 2-3 minutes.
- Add the chicken breasts and chicken broth to the pot.
- Add the bay leaves, thyme, salt, and pepper.
- Bring the soup to a boil, reduce heat, and simmer for 20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and shred it with two forks.
- Return the shredded chicken to the pot and add the egg noodles.
- Simmer for another 10 minutes until the noodles are tender.
- Remove the bay leaves and stir in the chopped parsley.

Notes
