For the broth:- 8 cups of water
- 1 whole chicken, cut into pieces
- 1 onion, chopped

- Salt and pepper to taste
- 1 pack of mee sua noodles
- 1 carrot, julienned
- 1 cup of cabbage, sliced
- 1 cup of bean sprouts
- 2 green onions, chopped
- Cilantro leaves for garnish

Method
1. In a large pot, add water, chicken, onion, garlic, ginger, soy sauce, fish sauce, salt, and pepper. Bring to a boil and let it simmer for 20-25 minutes or until the chicken is cooked through. 2. Remove the chicken from the pot and set it aside to cool. Strain the broth using a colander and discard the solids. 3. Return the broth to the pot and bring it to a boil. Add the mee sua noodles and let it cook for 5-7 minutes or until the noodles are tender. 4. In a separate pot, blanch the carrot, cabbage, and bean sprouts for 1-2 minutes or until they are cooked but still crisp. Drain and set aside. 5. Once the chicken has cooled down, shred the meat and set it aside. 6. To serve, divide the noodles among four bowls. Add the shredded chicken, blanched vegetables, and green onions on top. Ladle the hot broth over the noodles and vegetables. 7. Garnish with cilantro leaves and serve hot.Notes
