Ingredients

  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped cabbage
  • 2 cups vegetable stock
  • 1/2 cup fresh cream
  • Salt and freshly ground black pepper (kalimirch) to taste

Method

  1. Bring a pot of water to boil, add the tomatoes and blanch for 2-3 minutes.
  2. Drain the water, remove the skin of the tomatoes and chop them roughly.
  3. Heat the butter in a pan, add the garlic and onions and sauté for a few minutes.
  4. Add the celery, carrots and cabbage and sauté for a few more minutes.
  5. Add the chopped tomatoes and cook for 5-7 minutes.
  6. Add the vegetable stock and bring to a boil.
  7. Simmer for 10-15 minutes.
  8. Blend the soup in a blender until smooth.
  9. Return the soup to the pot and add fresh cream, salt and pepper.
  10. Cook for 5-7 minutes and serve hot.

Notes

  • You can add more or less vegetables as per your liking.
  • For a healthier version, you can skip the fresh cream.
  • You can also add some croutons or breadsticks for texture.
