- 1kg of chicken, beef or fish
- 2 onions
- 4 fresh tomatoes
- 2 red bell peppers

- 1 teaspoon of ground crayfish
- 1 teaspoon of Nigerian curry powder
- 2 bay leaves
- Salt and pepper to taste
- Vegetable oil

Method
- Blend the groundnuts into a smooth paste and set aside.
- Blend the onions, tomatoes, red and green bell peppers, and scotch bonnet peppers into a smooth paste.
- Season the meat or fish with salt, pepper, and Nigerian curry powder. Heat up some vegetable oil in the pot and fry the meat or fish until brown. Remove from the pot and set aside.
- Add the blended pepper mixture to the pot and fry until the excess water evaporates and the mixture thickens.
- Add the meat or fish back into the pot and stir to combine with the pepper mixture.
- Add the blended groundnut paste to the pot and stir to combine. Add the chicken stock, bay leaves, and ground crayfish.
- Simmer the soup on low heat for about 45 minutes to 1 hour, stirring occasionally to prevent it from burning.
- Taste and adjust the seasoning as needed.
- Serve hot with rice or any other swallow of your choice.
