- 1 pound of fresh okra, chopped

- 1-2 cups of water
- 1-2 pounds of meat (beef, chicken or fish)
- 2-3 tablespoons of palm oil
- 2-3 tablespoons of ground crayfish
- Salt and pepper to taste
Equipment
- Large pot
- Wooden spoon
- Chopping board
- Sharp knife
Method
- Wash and chop the okra, onions, bell peppers, and scotch bonnet peppers.
- In a large pot, heat up the palm oil and sauté the onions until they become translucent.
- Add the chopped bell peppers and scotch bonnet peppers and sauté for a few more minutes.
- Add the chopped okra and stir well to combine with the other ingredients.
- Add the stock and water and stir well. Allow to cook for 10-15 minutes.
- Season with salt, pepper and ground crayfish.
- Add the meat and allow to cook for another 10-15 minutes until the meat is tender and cooked through.
- Remove from heat and serve hot with fufu, pounded yam, or any other swallow of your choice.
Notes
- You can use any meat of your choice or even fish to make this soup.
- You can also add other vegetables like spinach or kale to make the soup even more nutritious.
- If you don't have palm oil, you can use vegetable oil instead.
