- 1 ham hock
- 500g dried split peas
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 2 bay leaves
- 1 tsp dried thyme
- 2 liters chicken stock
- Salt and pepper, to taste

- Large pot or Dutch oven
- Wooden spoon
- Blender or immersion blender
Method
- Soak the split peas in cold water for at least 2 hours, or overnight.
- Drain the peas and set them aside.
- In a large pot or Dutch oven, add the ham hock and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour, or until the meat is tender.
- Remove the ham hock from the pot and set it aside to cool.
- Add the onion, carrots, celery, garlic, bay leaves, and thyme to the pot. Sauté for 5-7 minutes, or until the vegetables are soft.
- Add the drained split peas and chicken stock to the pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until the peas are tender.
- Remove the bay leaves from the pot.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Shred the ham hock meat and add it back to the soup.
- Season with salt and pepper, to taste.
- Serve hot with crusty bread.
Notes
If you don't have a ham hock, you can use bacon or pancetta to add a smoky flavor to the soup. Simply sauté the bacon or pancetta with the vegetables and continue with the recipe as written. You can also add other vegetables to the soup, such as potatoes or leeks, if you like.Nutrition Info
