- 6 slices of bacon, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 potatoes, peeled and chopped
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Chives, chopped (optional)

- A skillet
- A blender or immersion blender
- A ladle
Method
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and set aside, leaving the bacon fat in the pan.
- Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.
- Add the chopped potatoes and chicken broth to the pot with the onions and garlic. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the potatoes are tender.
